Mit dem schon erwähnten Tamper Data kann man POST Daten manipulieren und sieht request und response. Kann allerdings AFAIK keine ASCII ausgabe.
Vielleicht bringt dir ja http://httptea.sourceforge.net/ oder http://www.httpanalyzer.com/ etwas. So etwas wie das letztere Programm hab' ich auch schon mal als freeware gesehen, weiß aber leider nicht mehr wo.
