Well, I'd be very interested in SDL-based (sdl runs on windows too AFAIK) thingy that could run the FS XML gauges (XML + bitmaps, might actually not be THAT hard to implement) but could run them on a remote machine, and also would focus on smooth updates and subpixel antialiasing and moving of the elements.
Most of the existing projects are for glass cockpits, whereas I would find analog gauges more useful.
