I guess you can make FSBUS Servo somehow tighten a bungee cord in relation to airspeed, that might work.
While you are doing little things to add an illusion of speed, put a R/C speed controller + a PC 12V fan or a ducted fan engine that blows "cabin air" through a vent on your face - such small things can create a lot when combined together
For trimming I think Mike Powell from AVSim forum suggested modifying an electric screwdriver to turn a bolt and thus move the attach point of the spring/rubber rope along the yoke axis to adjust the center point, that *might* work and does not really need to be connected to FS in any way. It can be just a mechanical way to adjust the center point.
